1. Tell us about the history of your company. What motivated the founders to begin this journey and how long have you been in business?

The Low Carb Co was founded out of a personal and professional mission to make food that supports better blood sugar control without compromising taste or texture. Our founder, Jack, lives with Type 1 diabetes, Addison’s disease, and hypothyroidism. Food has always been both fuel and medicine. What started as an effort to create a low-carb snack that was genuinely delicious evolved into a growing Canadian brand now found in hundreds of stores nationwide and online.

2. What are your core products or services and what makes your offerings unique?

Our flagship product line is our Super Seed Crackers - light, airy, and crunchy cracker snacks made entirely from nutrient-dense seeds. They’re low-carb, high-protein, and high-fibre, with 2g net carbs per 6 crackers. What makes them unique is their texture (thanks to a specialized production process) and their clean, real-food ingredient list - nothing processed, nothing artificial. Every bite is designed to optimize energy and support blood sugar stability.

3. Can you share a particularly proud moment for your company?

One of our proudest moments was earning shelf space at Farm Boy, one of Canada’s most respected premium grocers, after years of grassroots growth and retail hustling. It validated that consumers and retailers alike see the value in what we’re building: a truly healthier, functional snack that belongs in mainstream stores, not just health aisles.

4. How do you see your industry evolving in the next few years, and what role do you hope to play in it?

We see the snacking and functional food space rapidly converging. Consumers are demanding snacks that do something for their health. As metabolic health becomes one of the biggest public health priorities, low-carb, high-protein, and high-fibre foods will move from niche to norm. Our role is to lead that shift by being the go-to low-carb brand Canadians trust - transparent, delicious, and functional.

5. What trends are you most excited about in your industry, and how are you preparing to meet them?

We’re most excited about the growing consumer awareness around blood sugar management and metabolic health. With tools like continuous glucose monitors becoming mainstream, people are discovering firsthand how certain foods affect them. We’re preparing by building a portfolio of products that align with that data - foods that fuel steady energy, focus, and longevity.

6. Who are your main customers, and how do you cater to their specific needs?

Our main customers are health-conscious individuals who want to eat well without the crash - from busy parents, athletes, professionals to diabetics who care about performance and wellness. We cater to them through honest ingredients, clean labels, and products that are both doctor-recommended and craveable.

7. What is the feedback that customers appreciate most about your products?

Customers consistently tell us they can’t believe something this healthy tastes this good. They love the crunch, the lightness, and the simplicity of our ingredients. Many diabetics and low-carb eaters say our crackers are one of the few snacks they can eat freely without worrying about a blood sugar spike - that’s the ultimate compliment.

8. Where do you see your company in the next five years?

Within five years, The Low Carb Co will be a household name across North America - available in all major retailers, from Farm Boy to Costco to Whole Foods. We’ll have expanded our portfolio into on-the-go snack packs, breads, and other low-carb baked goods, all under a single clear mission: to make living low-carb easy, delicious, and empowering.

9. What personal advice would you give to someone wanting to enter this industry?

Start with a real problem to solve - not a product to sell. Be obsessed with the details, from ingredients to logistics, and expect it to take years, not months, to get it right. And above all, talk to your customers - they’ll tell you what matters most.

10. What’s the best piece of business advice you’ve ever received?

“Stay close to the fire.” Meaning: surround yourself with people, partners, and environments that give you energy, not take it. The right relationships - distributors, mentors, co-manufacturers, investors - make all the difference when you’re building something from scratch.
